week 13

v515_4Not much to report this week. Just posting this quickly before we head on a mini vacation with friends.  Excited to share the food adventures we’ll be having, since our goal is to stay in the cabin in comfy closes, enjoy the sun on the deck & eat food. Oh, and do tiny bits of homework.


Breakfast: peanut butter toast or eggs & potatoes or oatmeal

Sat. lunch: falafel with pita, tomato, greens & tzatziki
Sat. dinner: Joe’s potato & egg nest
Sun. lunch: Joe’s potato & egg nest
Sun. dinner: SPROM! (SPEA’s “prom”–a dinner & dance to say farewell to grad school)
Mon. lunch: nachos & burritos
Mon. dinner:
miscellaneousness  soba with greens
Tues. lunch: pâtes en rose
Tues. dinner: homemade pizza
Wed. lunch: leftover bibimbap & falafel
Wed. dinner: frozen pizzas
Thurs. lunch: barley with almonds, roasted squash & summer squash
Thurs. dinner: kitsune soba with shredded Brussels sprouts & kale
Fri. lunch:
leftover pasta with roasted beet sauce
Fri. dinner: leftover soba

chips & salsa, carrots, almonds, brownies


Organic Groceries from the Co-op ($70)
tortilla chips
mandarin oranges
bell pepper
2 lbs. carrots
1 lb. Brussels sprouts
5 lbs. red potatoes
2 almond milks
1 lb. spinach
shredded cheese
2 pomegranate & blueberry juices
2 large cans of tomatoes
1 lb. almonds
1 lb. sunflower seeds
portabella mushroom
hot pepper
2 lbs. sweet potatoes
flax seed
1 large onion


  • some pasta I forgot in the fridge at work… which will have to stay there for a week
  • lots of compost
